Life Lately . . .

Hey Monday! I hope this day greats you with a favourite drink in hand. For me, that is decaf coffee and orange water kefir. Yes, I’m double fisting.

Sometimes I sit down to write, convinced I have something in me that should be written out, but find myself becoming intimidated by the emptiness of the page. Sometimes I need a few cues (these specific cues are inspired by Heidi from Apples Under my Bed-shes amazing!), so . . .

Doing: writing on the computer, occasionally popping over to a favourite blog, sitting at the kitchen table, bouncing on my exercise ball while sweet Mabel naps in the ergo on my chest.

Hearing: Currently listening to the “Into the Woods” soundtrack. I don’t know why, but I haven’t been able to get enough of it lately! I have been waking up with certain tracks stuck in my head, and I have specifically loving “Moments in the Woods” (I adore Emily Blunt’s voice!), “Giants in the Sky,” & “No One is Alone,” (which will almost always make me tear up). I have also been loving listening to the Harry Potter Soundtrack, James Taylor,  Passion Pit, & Jesus Culture Worship.

Eating: Currently eating some sliced yellow bell pepper with almond pulp hummus from the “Everyday Detox” cookbook by Megan Gilmore (the Detoxinista).  I can’t believe I haven’t made it before! Simply using the pulp from your almond milk, you can whip it up in less than 5 minutes. Game changer!

Drinking: As I said before, I’m double fisting it! A glass of orange water kefir & cold decaf coffee from this morning. 🙂 I just started brewing water kefir and I am in love! So far I have brewed orange, pineapple, and plain, and pineapple is hands down my favourite. Im am just finishing up this batch of orange though, and want to play around with more flavours. Maybe a blackberry? Maybe a sour cherry ginger? Maybe . . . so many possibilities.


Cooking: Last night, I made a peach pie for our book club/cooking club that meets once a month. Well, technically I have been baking. 🙂 And with a little one, I had to spread the recipe over a couple days! I made the pie crusts Saturday afternoon and popped them into the fridge to rest and chill. Saturday night after a party and after the little was rocked, nursed, and in bed, I poached and sliced peaches. Mabel work up a few times during the first hour she was down though, so I would peel and slice a couple peaches, go in to sooth her, slice a few peaches, soothe her, and it goes on. 🙂 Sweet little thing finally got to her deep sleep though! And I got to finish prepping the pie filling. The next morning before church, I assembled the pie and baked it. It was amazing! Lots of steps, but pretty as a picture and totally worth it.


I also made a batch of flaky buttermilk biscuits from Joy the Baker (this lady knows her biscuits, yo). And tonight I going to make salmon; I purchased a whole fish from the market, and I always get nervous when preparing a whole fish as opposed to fillets! Wish me luck.

Reading: A couple weeks ago I finished “Harry Potter and the Cursed Child.” I had the 24hour stomach flu, so Matt went to the store to stock up on gatorade, coconut water, and got me a book to make me feel better (yes, the’s the best). With my book club, I have been reading “Wild & Free” by Jess Connolly & Haley Morgan. It’s an ok book, just not as meaty and challenging as we would like. We are getting ready to start “Present Over Perfect” by Shauna Niequist and I am BEYOND excited! I have read “Bread & Wine” and Savor” both by her and they are beautiful and raw and wonderful.

Wanting: I have been wanting a proper spiralizer for a bit now! I have a handheld one, but the wastes part of the vegetable, and basically only works on zucchinis. I would like to use it for carrots, cucumbers, sweet potatoes, etc. I have a few zucchini sitting in my fridge that would taste lovely as a noodle salad with olives. I will have to start hunting for a good deal . . .

Playing: I have been listening to a lot of white noise lately, due to Mabel sleeping in the ergo for her naps throughout the day. I usually choose the ‘fan’ option, and listen to some music or podcast in my headphones  while holding my old touch iPod in my shirt strap so it will be close to her ears (don’t worry, its not up very loud! 🙂 ). If it is during the evening and I am making dinner before Matt gets home, I generally let Mabel play in her exersaucer while playing “Friends” in the back ground for some banter.

Deciding: I am currently trying to decide what to pack for our travels next month! We will be visiting our aunt, uncle, and grandma on Salt Spring Island, and then just Mabel and I will be traveling back home to Springfield to visit family for a couple weeks. I am so beyond excited about both of these trips! I love Salt Spring. I visited for the first time about four years ago when Matt and I were dating, and it stole a small part of my heart. There is something about the small community and laid-back vibe that resonates with me. I keep telling Matt we should move there someday. 🙂 I am also excited to visit Springfield and introduce Mabel to the rest of her family! She will meet her cousins, a few aunts and uncles, her Memaw (her middle name is Jeanne after her Memaw), and get to meet a handful of friends. I am bummed Matt can’t join us, but we are still going to have so much fun!

Enjoying: This weather! We had a pretty crummy June and July (I can’t tell you the number of times I was in my house in sweats and wool socks, wondering why in the world our summer hadn’t arrived!). Finally last week wee got some HOT weather, which was right up my ally! I have been trying to spend time in the sun, taking dips with Mabel in her little pool in our yard, then letting her lie in the shade while I soak up some Vitamin D.

Looking: I’ve been looking through my cookbooks that I use regularly, because I always miss something wonderful! I try to keep my eyes peeled for things I haven’t made yet, and I am always surprised how many amazing recipes can be in one book! I listed my favourites in my last post about meal planning.

Wondering: How to use up the beets in my fridge! Beet chips? Grated for salads? I’m currently dreaming up a grated root veg orzo pasta salad . . . if I succeed I’ll share the recipe, most like with the title “A Very Pink Salad.” 🙂

Loving: My French press. I have been making coffee in my aeropress or chemed the past few years, and I busted out the French press a couple weeks ago just for old times sake. I forgot how delicious it was, and how wonderful it is that it makes more than one cup of coffee! This is a game changer for this girl who sips throughout the day (it’s decaf, so I can do that).

Buying: I am debating purchasing some organic tomatoes from our CSA  and going on a canning fest! We use so many cans of diced tomatoes, especially in the winter months for soup, sauces, etc, and it would be nice to have organic tomatoes that I have canned so we know exactly what is in them. Plus, they will inevitably taste SO much better!

Planning: We are planning on doing some fall camping this autumn! We probably won’t be able to go too far, but there are some rad campsites 10-30 minutes from here, so we would be able to set up camp for a week, and Matt could commute into work while Mabel and I hold down the fort, go for hikes, and enjoy the hammock. I am getting excited for waking up in a tent, and enjoying hot coffee while being cozy and enjoying the crisp air!

Savouring: My favourite salad dressing recipe! I literally put it on almost everything. It’s so simple to whip up, so I usually keep a jar in the fridge for my lunches.

6 cloves of garlic
4 tbsp tahini
4 tbsp extra virgin olive oil
2 tbsp apple cider vinegar
2 tbsp bragg’s or tamari
2 tbsp nutritional yeast
2 tbsp lemon juice
Adjust consistency with water

Considering: My next tattoo. I have the design almost 100% set in my mind, I just feel like it needs a couple tweaks. When I have a better idea, I am going to have a friend draw it out for me. I will probably get it sometime in the winter/spring; I am so excited!

Watching: Matt and I usually have one show we watch together, then have ones that we watch on our own. We are currently watching “Bloodline” season two, which is good, but no where near as good as season one! I am watching “Grey’s Anatomy” and just started season three. Last time I watched it when it was on TV I only got through season two, because Denny and Izzy nearly broke my heart in two.

Wearing: Workout clothes. I go out for a power walk at some point in the day, and have been having trouble finding an official time to get a wee workout in (even though I haven’t been given the green light for much because of an ab separation, hernia, and a pelvic floor that isn’t quite what it used to be). Because I haven’t found an official time for squats, arms weights, etc I try to work it in throughout the day. But what I am wearing and LOVING is a denim tank romper that I got from Target last month. It has snaps up the front which make it perfect for nursing, it’s soft and comfortable, and I want to wear it everyday!

Feeling: Honest. I have been having a rough couple of weeks with all sorts of feels, including restlessness, inadequacy, loneliness, wanderlust, un-founded guilt, and annoyance at myself. Not constantly, but these things creep up on me then all of a sudden I’m in the thick of it. I am trying to be a bit more honest and open, because once I am I can feel whatever I am dealing with start to flit away and I become lighter just by sharing. I also feel like I am coming upon a season of change in myself. Whether that be through discovering something new, uncovering and digging through past that is negatively affecting my future, or maybe a mixture of these things. I always feel a bit nervous when I am about to dive into a season like this, but I am excited at the same time.
